Recipe – Dead Veg Soup

This is a great way to use up leftovers.

Ingredients

  • 2 x onions, chopped
  • 2 x carrots, chopped
  • 2 x celery stalks, chopped
  • 1 tbsp vegetable oil
  • Leftovers eg cooked chicken, potatoes, mushrooms or tomatoes, chopped
  • Stock powder

Method

  1. Soak soup mix overnight
  2. Fry onions, carrots & celery until softened, about 5 minutes
  3. Add leftovers & soup mix
  4. Cover with water, bring to boil and cook until tender, about 40 minutes
  5. Add stock powder
  6. Blend & season to taste Recipe
